We’ve all told our parents, “I will never say that to my kids,” but at some point you’ve still heard yourself say “No dessert before eating your meal” or “No sweets for breakfast.” Now, you can be the best parent ever or satisfy your own subconscious by serving these cookies for breakfast. This great recipe puts a twist on a bowl of oatmeal while maintaining its nutrition. Check it out!
Ingredients
1 1/2 cups whole wheat flour or whole grain pastry flour
1 teaspoon baking soda
1 teaspoon salt
3/4 cup olive oil
1/2 cup sugar
1/2 cup honey
2 eggs, lightly beaten
2 tablespoons fat-free milk
1 1/2 tablespoons vanilla extract
2 1/4 cups quick-cooking oats
1 cup golden raisins
1/4 cup mini chocolate morsels (or a dark chocolate bar broken into bits)
Directions
Preheat the oven to 350°F. In a large bowl, combine the flour, baking soda, and salt. In another large bowl, whisk together the oil, sugar, and honey until creamy. Add the eggs and stir until thoroughly combined. Add the milk and vanilla extract and stir again. Add the flour mixture and stir until just combined, then fold in the oats, raisins, and mini morsels. Drop the dough by tablespoons onto an ungreased baking sheet. Bake for 9 to 13 minutes, or until slightly browned but still very soft. Cool for several minutes and then store in an airtight container.
