Last week, I wrote a post discussing some of the great health benefits of nuts. Today, I’ve got a great healthy recipe that makes excellent use of almonds. In fact, this chicken dish provides you with 65% of your daily recommended protein!
Additionally, during the holiday season, I sometimes burn out on the traditional ham dinners. So if you’re looking for something a little different for dinner, give this protein-packed chicken dish a try!
Serves: 4
Ingredients:
½ cup salted almonds, smoked
1 slice white bread, lightly toasted and torn into pieces
¼ teaspoon group black pepper
¼ cup reduced-fat sour cream
½ cup barbeque sauce
4 small boneless, skinless chicken breast halves (about 1 lb.)
Instructions:
1. Preheat oven to 400 degrees.
2. In food processor, pulse almonds, bread and pepper until coarsely chopped. Transfer to wax paper.
3. In pie plate, mix sour cream with 1 tablespoon barbeque sauce.
4. Dip chicken into sour cream mixture, then into almond mixture to coat. Press firmly to ensure adhesion. Arrange chicken breasts onto an ungreased cookie sheet.
5. Bake until chicken loses its pink color throughout, 12-15 minutes.
6. Serve with remaining barbeque sauce.
