As my one of my previous posts explained, I have made a resolution to “… learn how to cook a few more things at home” and so I have been on a mission to find delicious recipes to try. Most of us, including myself, often believe the theory that if it tastes too good, it can’t be good for you, right!? Well, not so, at least in this case. I found a great recipe that challenges my culinary horizon, as well as holds its nutritional value and still tastes great. I thought that something so good, should be shared!
Turkey Pasta Bake with Spinach
Ingredients
1 pound lean ground Turkey, cooked
28 oz. spaghetti sauce
1 can diced tomatoes and green chilies, drained
1 cup sour cream
16 oz. pasta of your choosing
1/2 cup parmesan cheese, grated
3 oz mozzarella cheese
1 cup frozen spinach, thawed
Italian seasonings
1 tbsp pepper
3 garlic cloves, diced
1 cup onion, diced
Directions
- Spray cooking pan with cooking spray. In the same pan cook onions and garlic until onions are tender. Add turkey and make sure to cook thoroughly.
- Once cooked add pepper and Italian seasonings. Cook for 1 minute.
- Add diced tomatoes and thawed spinach.
- Cook for 1 more minute.
- Add spaghetti sauce, sour cream and parmesan cheese. Let this simmer.
- Cook pasta of your choice according to package. Drain and then combine with meat and sauce mixture.
- Pour into a 13x9 baking dish.
- Top with mozzarella cheese
- Bake in oven at 375 degrees for 25 minutes.

After this recipe, I feel I can take on the Julia Childs French cookbook… well maybe not yet! But, it certainly made me feel that I can really achieve this year’s resolution.
