Everybody assumes that since I’m a Wellness coach, all I eat are vegetables!  I do not love eating vegetables. There, I said it. Now, don’t get me wrong, I like them enough to balance my diet. After all, veggies are nutritious, full of fiber, and often low in calories. On top of all those benefits, another benefit is the wide variety of vegetables; if you don’t like one just try another. Believe me, I know all of this and yet I still struggle to eat my recommended daily intake of veggies. I don’t like eating them plain and I rarely eat salads. But with so many people around me getting sick I know I need to boost my intake so my body can be strong enough to defend itself. That’s why I’ve decided to sneak veggies into other foods I eat to ensure I get the vitamins and minerals my body needs.

 
  • Smoothies: I dug my blender out of storage and grabbed an assortment of items from the refrigerator. After experimenting a few times and not being happy with the results, I decided to just look for a recipe that would include some greens but didn’t taste like grass. This recipe from greenmonstermovement.com hits the spot- no joke. I couldn’t taste any spinach or seeds!
Ingredients:
  • 2-3 cups of spinach (I used baby spinach)
  • 1 cup milk ( I used some soy milk I had lying around)
  • 1 banana
  • 1-2 tsp. flaxseeds
  • Ice

    The ingredients may not be what you are used to drinking in a smoothie but I promise it tastes wonderful!
 
  • Soups/chili: This isn’t a surprise; it is very easy to sneak vegetables into soups and chili. I just have to heat up my Crockpot and get to it!

  • Brownies: Yes, you read that correctly. Brownies. Brownies and …beans? Yes, black beans to be specific. Try this recipe and if you can taste the beans in it then I’ll apologize to you personally. I initially said “no way” to this recipe but after some coaxing from a friend I took a bite and ended up nearly eating half the pan (which landed me an extra 30 min. of treadmill time)!

  • Spaghetti: I have already blogged about how much I love spaghetti squash but I’m talking about the sauce here. Spaghetti sauce is a great way to get your fill of veggies. If you’re like my family, you never stick to one specific sauce recipe and instead throw in whatever you have around. However, if you prefer to use a recipe try this sauce. And, of course, there is always my last minute method of heating up a jar of premade sauce and adding in any carrots, chopped spinach, peppers, onions, and mushrooms I have at my disposal. With all the flavor in the sauce there is no way that I couldn’t love eating those vegetables! Although the garlic bread I always make with spaghetti certainly doesn’t hurt either…
