One of my favorite things to eat in the winter is soup. It is so hearty and warms you up after coming in from the cold. It can be hard to find a good healthy soup, but I was lucky enough to stumble on this article from Fitness Magazine that has 12 soup recipes. I can’t wait to try these to see if the taste holds up to the somewhat skeptical healthy counterpart. I picked out two that I am interested to sample in the next couple weeks and have shared them below.

Chunky White Bean

  1. Saute 12 ounces lean ground turkey breast and 1 chopped onion in 1 tablespoon olive oil; drain fat. 
  2. Add two 15-ounce cans great northern beans, one 16-ounce jar green salsa, 1 3/4 cups low-sodium chicken broth, and 1 1/2 teaspoons cumin
  3. Simmer, covered, 15 minutes.

383 calories, 38g protein, 53g carbohydrate, 3g fat (1g saturated), 12g fiber

Vegetable Beef Barley

  1. Saute 12 ounces lean beef in 1 tablespoon vegetable oil; drain fat.
  2. Add 4 cups low-sodium beef broth, 1 cup chopped onion, 1/2 cup chopped celery, 1 teaspoon oregano, 1/4 teaspoon pepper, and 2 minced garlic cloves. Cover; simmer 1 hour.
  3. Add 1 cup frozen veggies, 1 can diced tomato, and 1/2 cup quick-cooking barley. Cover; simmer 15 minutes.

338 calories, 24g protein, 29g carbohydrate, 14g fat (4g saturated), 6g fiber

I don’t think you can go wrong with Beef barley soup, so I assume that recipe will definitely be tasty. What do you think, are you leery of health food tasting good? Do you have a great soup recipe to share? I’d love to add it to my recipe box.
